First International Pelinkovac Festival Held in Stari Grad on Island of Hvar

A unique bitter-sweet aperitif as an inspiration for inventive
magic at the bar.

Stari Grad on Hvar is unique for many reasons (just remember
the Stari Grad plain or the Tvrdlja Castle of Petar Hektorović!) And now it has
come up with a completely unique festival!

Namely, this is the first international Pelinkovac festival, which will be organised on the Škor town square, organised by a company with the hedonistic name of Bon Vivant, with the support of the Stari Grad Tourist Board and the City of Stari Grad, on June the 27th, 2019.

Even though this is something that is being organised for the first time ever, the festival has already been very well recognised, with as many as 10 recipes supported by Croatian producers - Dalmacijavino and Badel with Gorki, Orange and Antique Pelinkovac, Coca Cola with Golden (Zlatni) Pelin and with their bitter-sweet candidates in optimal harmony with aromatic herbs - Maraska, Darna, Perković rakija, Natura Antunović and Degenija Velebit will bring their own contributions.

The aim of this festival is to raise awareness of the quality of Pelinkovac as something special and what is for this climate, a typical product, as well as a quality supplement, with both classic and modern cocktails. A lecture and a workshop have been created based on this theme, where all those present can try all of the 10 exhibited types, and independently discern which flavours function best.

Although mugwort hasn’t been all that popular as a cocktail
ingredient because of its famed bitterness, the great barmen at this event are
there to prove the opposite to you! Although it is most often served separately
with ice and a lemon or an orange slice, the complexity of its taste is in fact
an inexhaustible source of variations for making both refreshing summer
spritzers, as well as classic, more bitter cocktails.

Going by the five to five principle, five bartenders will
create five cocktails based on five different types/brands of Pelinkovac -
besides their unique craft cocktails, there’ll be five-in-one tasting of all
five types used in their creation.

of the legendary bar guru Chris Edwardes from the Hidden bar on Ibiza, Lukasz
and Mischa Lewicki from Stari Grad’s Bon Vivant, as well as Croatian masters
Marko Skarpa of Lampedusa bar, and Marino Karinja from Solutions bar!

Mischa and Chris will jointly host a Masterclass on the theme
of Pelinkovac in classic cocktails (12.00-13.00h); we like the Pelin workshop
‘’in my way’’ (13.00-14.00h), and we particularly like the pop-up bars on Škor
square (17.00-23.00h) as well as the after party at Lampedusa bar! As there is
already so much in the name of the number 5, we don’t doubt that Stari Grad
really is going to create a brand new and inventive, A+ event!

A QUEEN CALLED PAŠTICADA. A true example of sweet-sour dish (see how Dalmatian cuisine is always a blend of extremes of some sort, unmatched by anyone?) is luxurious pašticada, gastro heritage of Venetia ad Byzantium, made even today for special occasions (due to its complex preparation) of beef aitchbone in wine, prosecco, vinegar, spices and vegetables. It is often accompanied by homemade gnocchi. Pašticada is so characteristic for this region that almost every household has its own way of preparing it; and it shares the throne with exquisite fish or meat dishes made under the baking lid!

Namely, if you haven’t tried veal, lamb or octopus under the iron lid, which enables food to be cooked and roasted at the same time, from a gastronomic point of view, you haven’t even been to Dalmatia, so do not miss it! If you visit the islands, let the magic of small family restaurants overwhelms you.

There, apart form aforementioned Dalmatian classics, you can indulge in carefully prepared specialties like mutton baked on a juniper spear, which stimulates with resin wood aroma, or for example – crunchy vitalac - ancient dish made of lamb offal served in the “lamb capital”, the island of Brač, which is also a gastro connection to Greeks.

Of course, if you prefer somewhat more modern gastronomic interpretations, there is a wide choice of modern gourmet oases – make yourself infatuated with octopus stew or burgers, monkfish medallions, cuttlefish with broad beans, shrimps carpaccio with olive dust and fig pearls, or an entire pot of shells, shrimps and pasta!

WINES WITH CHARACTER. True gastronomads and wine enthusiasts could draw you a map of Split-Dalmatia County in a second – according to areas where the best autochthonous wines are made! It’s a common knowledge for all who ever tried Kaštela’s crljenak – the darkest of all Dalmatia wines, or bogdanuša and plavac from Hvar and vugava from Vis - that in an elegant glass of wine one can discover a whole new world!

With its classy barrique touch and mild tastes of blackberry, blueberry and cherry crljenak will most certainly comply with those in favor of fruity, bold wines. Although it was tied to Italian primitivo and Californian zinfandel, it has nothing of their sweetness and softness, it is a true - wine with a character!

Even Vienna Court could not resist Hvar’s bogdanuša, which was served only for holidays due to its elegance; while Vis’ vugava overwhelms with discrete aromas of peach, almond and orange! If you prefer red wines, enjoy in full, rounded, delicate woody taste of Hvar’s plavac mali, captivating like a nicely dressed girl walking along Hvar’s waterfront!

SOMETHING SWEET FOR THE END. What kind of a meal would it be without a good, tasty dessert?

Beautiful rožata dates back to Venetian times, and it was considered a pride of Dalmatian desserts! It is cooked in a caramel coat, while a magic addition to a simple recipe that contains milk, eggs, vanilla and sugar is a scented rose liqueur! Split Cake will enchant you with rhapsodies of figs, almonds, walnuts, dates, raisins and rum, and eager Dalmatian housewives discovered that the dough and cream are made of even 10 eggs!

Simple and delicious paradižet is made throughout Dalmatia, just as omnipresent fritule, kroštule and doughnuts, most commonly served in Dalmatian hinterland. Islands have their own trumps as well, just look at the list of Croatian intangible heritage goods and you will find there Dol’s hrapošćuša cake resembling the very Brač’s karst and famous Starigrad’s paprenjak! Combine them with a few drops of tempting lavender or carob liqueurs and you have finalized one great (and very tasty!) Dalmatian adventure!

Gastronomy of Trilj region - meet the rhapsody of tastes that exhilarates

MYSTERIOUS AND SOMEWHAT MISTIQUE TRILJ, has embossed its gastro map with a similar print. It originated in the place of old Roman camp Tilurium, and not only did it intertwine the roads of ancient people, but also the most diverse culinary influences!

In Trilj’s cuisine karst and river blend, while dishes are refined with honey, dates, figs and old Roman condiments! Besides characteristic Dalmatian specialties, Trilj will spoil your palates with veal under the baking lid, frog stews, Cetina trout and crab stews, but with successfully interpreted dishes with ancient mark as well! If you are eager to find out which specialties awaken a true pride among Trilj people, which delicacies date back to ancient times, which you mustn’t miss – it’s worth reading on!

A FEATURE OF IRRESISTABILITY. Favourite dishes renowned as true classics on Trilj area are by all means, veal and lamb on a spit or under the baking lid. Both ways of preparation give this food the same feature – you just can’t resist them! Namely, how else to describe tempting meat on a stick, which depending on a type of wood the stick is made of, captures sophisticated wood aromas that make your heart mellow? Or truly delicious, tender veal or lamb under the baking lid, heated with beechwood, cooked and roasted at the same time under the iron lid strewn with wine grape live coals?

SWEETEN YOUR PALATES WITH MEAT – OR EVEN RIVER SPECIALTIES. When an important dinner for a special occasion is prepared in Trilj, there is a great chance that aforementioned dishes will be on a menu. Even though exquisite octopus can also be found under the baking lid, very special Trilj delicacy is polestar (young rooster)! Bread is also often baked under the lid, and they are especially proud of their traditional dish made of lamb meat – Trilj’s šiša – made of three times boiled lamb offal and intestines, with addition of bacon, home-grown onions and tomatoes! A particularly typical of Trilj is also baby beef tongue in sauce, followed by kaštradina (dried mutton), and game meat prepared in various ways. This being a region of wild and powerful the Cetina river, it’s not surprising that, besides meat you get to sweeten your palates with an abundance of river trout and crabs, or frog stew.

ENJOY IN MEALS PREPARED ACCORDINFG TO A COOKBOOK – FROM 1ST CENTURY! In Trilj you can taste the best sheep and goat cheese, fresh cow cheese, often accompanied by delicious doughnuts! Sacrificial bread Libum presents a true gastronomic sensation, and it’s still made in Trilj in ancient way!

The most interesting fact is that this bread, besides flour ad eggs, contains also sheep cheese and laurel leaves, while there are versions when it’s made with 5 types of cheese, one egg, and no flour at all! To make this gastro story even more interesting: this is just one of the many ancient dishes made in Trilj on specific gastro points – there are trout with Roman dressings, Lukanijeve sausages that are a combination od meat and honey, and dumplings made of cow cheese, honey, olive oil and poppy seeds. Together with Trilj’s grandma’s recipes, jealously kept for generations, to gastronomads’ joy, there is also a cookbook from the 1st century – very much in use!

We haven’t forgotten about those in love with a sophisticated wine drop - after all, tasty and distinctive meals need to be finalized in grand style! The festival of "šalša" and salsa in Kaštela

The beginning of September (September 1st) is the best time to enjoy ripe tomatoes and the captivating South American rhythms of salsa. The Festival of šalša and salsa is a unique event in Kaštela organized for the 8th time by the Kaštela Tourist Board and the Society Šušur at Igrišće in Kaštel Štafilić. It's an opportunity for everyone to try to cook the šalša and dance the salsa.

Kaštela

The town of Kaštela is located on the coast of the Bay of Kaštela. It has over 40 000 inhabitants, and it is the second largest town in the Split and Dalmatia County. It stretches over the length of 17 kilometers. Our town is specific because of the fact that it developed around 7 settlements (Kaštel Štafilić, Kaštel Novi, Kaštel Stari, Kaštel Lukšić, Kaštel Kambelovac, Kaštel Gomilica and Kaštel Sućurac) or around castles. Each village has its own particularity merged into character of this part of Mediterranean. Radun and Rudine emerge in recent years as the two new smaller centers.

The eastern part of the city is a little industrial center. Cement factories, a steel mill and many shopping malls are situated there. Agriculture based on crops traditional for this region is developed in the Field of Kaštela an on the slopes of Kozjak. Growing of olives, grapes and cherries flourish in the recent times. The western part of the town is more tourism- oriented. This is the area with most accommodation capacities: tourist apartments, rooms, camps and hotels.

There is a newly built Marina Kaštela in Kaštel Gomilica capable to accommodate large number of private and charter boats. Kaštela is of the places with the best traffic infrastructure. We have an international airport Split – Kaštela, a railway station at Kaštel Stari, and access to Split – Zagreb highway at Prgomet and Vučevica.

There are many organizations and institutions which enrich cultural life of the town throughout the year. The Museum of the town of Kaštela found its place in the Vitturi castle, and an exhibition room in onetime bishop’s summer residence in Kaštel Sućurac .

Dessert offer is no less attractive – during holidays Okrug’s hosts always prepare popular fritule and kroštule, and you should also try Trogir’s rafioli, allegedly named after miss Rafioli who was held captive in a tower and spend her days baking cookies!

And if your palates take you to Split, try Split cake, rožata, paradižot…

But, what is a tasty meal without a glass of quality homemade wine? Try plavac mali, our the most significant autochthonous variety, bold, thick ruby red wine with a bluish reflection, or have a glass of kaštelanski crljenak, distant relative of American zinfandel, characteristic for its rustic taste and a red fruit bouquet with hints of pepper and anise.

Meet rural side of Supetar

THE GATES OF OUR BIGGEST DALMATIAN ISLAND – the town of Supetar – has opened its door to a return to tradition and rural tourism. And it is having a very stylish comeback – namely, next year in May Supetar will be hosting a congress dedicated to this specific tourism branch!

This is not by chance, for head people of our island’s metropolis know that a return to everything primal, original and authentic that a destination has to offer is, at the moment, the most current trend in global tourist movements. In this spirit, they have put out on the tables of their restaurants and family rural households the most delicious traditional delicacies, enlivened old customs, brought their guests to authentic stone houses with an enchanting view, and gave us a great material for one of the most intriguing and - the tastiest – texts so far!

4th Congress of rural tourism in Supetar
Congress of rural tourism hosted by Supetar is going to be held from 9 – 13 May 2018. It will be one of the greatest expert tourist events ever held in Supetar. Apart from the professional part, there will be rich accompanying programme of fairs, concerts and excursions where they will present gastronomic, outdoor and heritage offer of Brač's rural area that has, over the years, become an integral part of Brač's tourist story.

A WORLD AS TRANSFERRED FROM A VISION. But, before we take a look at Supetar’s kitchens, we can’t resist not to see what cultural-historical attractions the place has to offer, which give a specific picturesque character covered in vail of mystery! For, how else would you describe Dragon’s cave, which looks as if it emerged out of the world between sleep and reality? A 30-min. ascend to the cave from Murvica place, accompanied by an expert guide, is a bit tiring, but you will be awarded with a view of fascinating reliefs that are a blend of Slavic mythology and Christian iconography! In 15th century this cave was a habitat of Glagolitic priests, and an authentic relief of dragon carved in a cliff would certainly be gladly used by makers of Game o Thrones!

No less interesting is Blaca dessert – monk’s monastery built close to a cliff that, like a nice apparition, resists the time! It is hard to believe that this complex of buildings of different purposes started with stone partition of a cave that was a shelter of hard working hermits against the Ottomans. Its interior will take your breath away – see old monastery kitchen, manuscripts, piano, gramophone, telescope… And for a complete experience of one of emblematic Brač’s traditions, set out on a theme road Hercules to stone quarry Rasohe, or visit Pučišća and its stone masonry school where you can see real works of art of hardworking students’ hands – made of far known Brač’s stone!

GASTRO – HEDONISM WITH A MARK OF TRADITION. If of all Brač’s experiences you prefer gastronomic ones, set out on a theme road “Dolčevita” (Dolce Vita) and sail in - sweet life where the most pronounced is gastro magic of Brač – 5 restaurants, taverns and rural households and a family vinery will please even the choosiest gourmets!

Supetar has turned to traditional gastronomy, and with a leitmotif Unlock the taste of authentic Brač island cuisine started a project ISLAND CUISINE Supetar which brings back the dishes made by traditional recipes by Brač’s grannies! This noble initiative has been embraced by 5 Supetar’s restaurants, and gastronomy oriented guests will be delighted to finally have a place to taste simple traditional island’s dishes.

But, they are not to blame, a simple look on tasty menus makes your mouth water, and the fact that the ambience is mostly authentic, in nicely arranged old house, is an extra reason for a visit! Agrotourisms are praised in all languages – a simple view on their tasty delicacies like spit roasted lamb, meat and fish under the baking lid, Brač’s cake and rožata; homemade juices made of Melissa and sage – makes our mind twist. Same thing happened after looking at a menu of Oil Museum, or some of rural households.

THEY WIN PALATES…AND HEARTS. Other Brač’s gourmet destinations offer great stories and experiences. Menu of tavern in Dol, together with already mentioned delicacies, offers rabbit in wine and varenik sauce with homemade gnocchi, manistrus pomidori and carbonara made by the old recipes, and it delighted all its visitors! A good proof of this is a comment posted on strict TripAdvisor by Italian lady Alessandra: “There are no words to describe this place – it is not only a restaurant, but a complete family experience!” This is exactly what head people of Supetar’s tourism wanted to accomplish and share with their guests.

Rural households on  Vidova Gora goes even one step further, they offer tasty homemade prosciutto, cheese and exceptional vitalac (ancient dish from Brač made of lamb or young goat’s offal that is unique in the world!) it offers an experience of a true Brač’s shepherd village! During summer cattle fair is organized here that attracts great number of people from Brač and tourists – this way kind Brač’s hosts win the palates of their guests with offered dishes, and their hearts with lovely animals - donkey named Jozica and cute dog Pipi are very popular on Facebook!

In a quest to delight your palates Oil Museum in Škrip has also been most successful. Together with delicious hrapošćuša cake (decorated with tasty walnuts so it resembles Brač’s karst) it offers nice olive and fig spreads and red homemade wine. It is possible, off course, to taste awarded olive oil and get familiar with the process of its production.

ALL THINGS CONSIDERED, we can say that Supetar has definitely realized that a way to one’s heart is through one’s stomach; and this is confirmed by numerous positive comments of delighted guests, who didn’t only get a delicious autochthonous meal, but a whole set of authentic island’s ambience. Actually, we are also a bit in love and we can’t wait for a visit to taste at least one piece of gastro-identity of our biggest island. And to its entering gate – adored Supetar, we can foretell great (and tasty!) tourist future!

"Supetar Island Cuisine" - recipes from Grandma’s treasury on the menus of elite restaurants

Pâtés of black and green olives, tuna pâtés, cottage cheese from Brač, sardines in souse, fish marinade, “frigadura” – fried fish, “panada”, Dalmatian horse beans, mussels on “buzara”… these are just some of the delicious meals from Brač Island, which were presented on the gastro display, during the eno-gastronomic event "Biser mora" (Sea Pearl), held in Supetar on Brač Island.

This is one of the most ambitious projects by chefs from the Mediterranean and European Regions (SKMER), designed as a competition of hospitality-catering schools and professional chefs. This year's "Biser mora" was concluded with a traditional dinner from Brač – for the occasion, vintage dishes were made, based on century-old recipes guarded by Grandmothers throughout the island.

Accompanied by traditional singing by klapa Pastura, the dinner was a delight for the palate and the ears of many visitors who enjoyed in this event. More than 300 chefs from 19 countries participated in the competition.  According to the votes of the international jury of judges, the title of the absolute winner and champion of "Bisera mora 2018" was appointed to chef Čedomir Trifunović from Montenegro.

On behalf of the organizer, the trophy was presented by Željko Neven Bremec. It is interesting to point out that an Indian chef and former culinary teacher, Anil Gorver, who took part in the exhibition segment, brought an Indian twist presenting his exotic cuisine.

The comeback of vintage dishes on local tables

During the beforementioned traditional Brač dinner, the main goal was to present traditional dishes, brought back to life by the project “Otočka kuhinja Supetar” (Islanders cuisine Supetar).

).  Last year, this project received the silver sunflower of Croatian rural tourism in the category "Traditional Rural Gastronomy" at the Rural Tourism Congress. The project “Otočka kuhinja Supetar” kicked off 2 years ago, on the initiative of the Tourist Board of Supetar and the Agricultural Cooperative Association Supetar, with the aim of promoting the local gastronomy and giving an incentive for the comeback of traditional islander food to the menus of restaurants on Brač Island.

Apart from its wonderful nature and other values, Brač boasts with its special gastronomy as well - with traditional cuisine making a big comeback to the local menus, it also means that not only tasty, but healthy dishes too will be offered to our visitors.

Fine cuisine coupled with fine wine – “plavac mali“

Back in the olden days, it all began with horse beans and mangold, hand-picked by hardworking islanders, who used to finish their long days by meals prepared with what the nature and the sea gave them. Todays’ gastronomy of Brač Island is based on those old roots, but also focused on widely known and high-quality lamb meat. Lamb on a spit, roast lamb, lamb under the “peka” bell or stewed lamb – these are just some of the variations for the preparation of this type of meat. Along with lamb, a dish called “vitalac” is one the rise.

. It is an old-fashioned meal from Brač, made of lamb or goat intestines, included on the list of Croatian intangible heritage. This list includes a famous cake, called “hrapoćuša” – its recipe is the best kept secret in the small settlement of Dol on Brač. Among  other islander dishes, we must not forget to mention artichokes with horse beans, sweet-sour liver, thick vegetable minestrone “jota”, mixture of wild cabbage, “pandolete”, “prženica” ...and all these spiced solely with olive oil. Make no mistake, these dishes need to “swim”, so be sure to drink a glass of quality wine –  a “plavac mali” sort from Brač.

Supetar settlement is particularly known as a major producer of high quality olive oil, and today it is part of the tourist image and the island brand.

Supetar's vintage dishes have not been forgotten – they are becoming more and more present on the menus of this island’s restaurants, with a facelifted, modernized twist. It is of great importance to keep these food delights live and present in the minds of new generations of chefs and hospitality professionals, who will keep on presenting them to new guests and by doing so, maintaining the traditions of their Grandmothers very alive.

Two grains of salt woven into Mediterranean dishes

The sun, citrus fruits, olive oil, fish and sea food. Of all these ingredients you get dishes that are appealing to the eye and delicious to your palates. They are the main part of Mediterranean diet – the healthiest diet in the world! And autochthonous dishes made in the area of Split-Dalmatia County are abundant with these ingredients! Its ideal geographic position reflects rich gastronomic offer of its cities and places. It is full of contrasts in which taste of past times blend with today’s creative cuisines and contemporary tastes.

But, what stays the basis of every good Mediterranean dish, not common in any other diet are two grains of salt and the smell of fireplace. Each of these two grains of salt, brought by warm south or cold north wind, has its own story woven into autochthonous dishes…

Frog legs stew and Cetina’s trout

Going thorugh Dalmatian hinterland and its beautiful landscape bordered by the River Cetina, you will find some of the dishes affected by the winds, but also the richness of natural and untouched rivers. The dish we strongly recommend is frogs stew on baškotin – lemon juice is poured over frog legs and they simmer on light fire with all the other ingredients. They can be served on baškotin, traditional type of hard sweet toast. If you wish to visit Trilj, then with already mentioned frog legs you should also try Cetina’s trout. This royal river fish with red dots on it body is becoming very rare in the Cetina River. It is most often prepared on grill, fried or cooked by people from Trilj and Cetina surrounding, and it is very tasty if it’s covered in corn flour and boiled. Only a few kilometres away, in famous Alkars’ Sinj you will be offered Sinj’s arambašići. These are cabbage rolls made in traditional way – minced beef or pork rolled in sour cabbage leaves and cooked on light fire.

Descending towards the sea you will come across coastal places in Split-Dalmatia County where every good host will offer you lamb bowel with fennel. This is actually lamb tripe, a specialty of coastal cuisine, made of lamb entrails noodles and potatoes, seasoned with garlic and spices. Fennel is the one that gives a special taste to his traditional dish.

In places of Split-Dalmatia County it is all about tasty and healthy food, so some of the traditional dishes in which locals, but guests as well, enjoy are koštradina – dried mutton, šalamaštrani tongue with capers or polestar – young rooster under the baking lid. Islands’ specialties are Vis’ and Komiža’s pie. In Komiža it is made with combination of salted sardines and tomato sauce with olive oil and parsley, all this wrapped in bread dough. After it is baked, it is cut into squares. And the most important thing…it blends perfectly with a glass of red wine! Vis’ pie is very similar, with salted sardines and onions sautéed on olive oil, only without tomato sauce.

As every dish ends with a delicious dessert, we end our story of autochthonous dishes with Imotski’s rafioli, traditional dessert made in every household in Imotski on special occasions and for holidays. This Dalmatian sweet is made of dough with walnut stuffing, dipped in brandy and sugar after it is baked.

But, this is not all! With prosecco and Makarska’s rafioli as a harmonious Mediterranean couple love was born on many occasions in warm, summer nights. What makes Makarska’s rafioli different from all other sweets is thin, crispy dough with walnut stuffing. For the choosy ones, there is also Makarana cake.

Just as Sacher cake is famous with Vienna people and their guests, so does Makarana lure with its Mediterranean magic. With all these delicacies, paprenjaci biscuits mustn’t be forgotten.

Their main ingredient is saffron, which was, together with honey and coriander, very important product on islands in 16th century. On the island of Vis you can sweeten your tooth with hib – former farmer’s pie made of figs, aromatic herbs, almonds and homemade brandy.


13th National Prosciutto and Cured Meats Products Fair Sinj

Sinj Business Center in cooperation with the town of Sinj and the Split-Dalmatia County is organizing the National Prosciutto Fair with international participation, a manifestation which gathers all relevant actors in the production and marketing of prosciutto and other cured meats products assortment.

At home in the Alka town with a long production tradition of this unique delicacy, the Fair has gained an impressive reputation among professionals, as well as visitors. It has been attracting a growing number of tourists to the Dalmatian Hinterland for more than a decade, and, impressively, off-season.

The manufacturers will, like before, have the opportunity to exhibit their products in the adequate stands where the visitors can browse, taste and shop. It is a great opportunity to present products via marketing materials, with the participation of the media which will be covering the manifestation.

A rich culture and arts program will be organized, including a promotion of traditional customs and crafts, as well as performances by the cultural and artistic associations from Dalmatia and Lika.

A number of workshops dealing with current agricultural and economic themes is also planned, with the participation of renowned experts. It is important to mention that the traditional presentations of tourist-catering schools from Sinj, Dubrovnik, Split, Trogir and Šibenik will also be held this year. Their students will be competing in the BURA cup where they will be judged in the art of arranging and serving of prosciutto and other traditional products.

The evaluation of the quality and uniqueness of prosciutto by selected manufacturers will be held on 22 March 2018, the day before the official Fair. The committee consisting of renowned experts and scientists, members of the association of seasonal analysts, representatives of scientific institutions, the Ministry and Center for quality of the Croatian Chamber of Economy will be evaluating the quality of the prosciutto, like before, based on the Ordinance on Prosciutto Quality Evaluation. The evaluation is open to the public and will be carried out in the presence of the committee members, the representatives of the selected manufacturers and the media, and the products of the Fair participants will be evaluated.

Sinj town, in the heart of Inland Dalmatia, is host to the 12th National Fair of Prosciutto and Dry-Cured Meat Products with International Participation. Don’t miss it and see for yourself why prosciutto is a delicacy without equal!

An essential part of every occasional menu, produced in the traditional manner, battered by the strong wind of bora coming from mountain tops, carefully chosen and preserved – prosciutto is a choice food that will please even the most sophisticated of palate!

There can be no better place to present this fine and homemade food than Sinj, a town with a long-standing tradition of making prosciutto and dry-cured meats, with recipes and the secrets of the craft that reach well into the distant past and are passed down through generations.

For tenth year running, the following are expected to participate at the Fair: major Croatian producers of prosciutto and dry-cured meat products, family farms, producers of prosciutto and Slavonian ham, representatives of regional meat industries, representatives of associations of producers, individual producers, major producers of Istrian and Drniš prosciutto, guests from Italy, Slovenia, Bosnia and Herzegovina, representatives of pig breeders associations, regional family farms breeding pigs, representatives of the leading chain stores and hoteliers and caterers.

A professional conference – round table will provide an opportunity for both producers and those interested to obtain the information regarding the topical issues and the importance of autochthonous and traditional products, with an emphasis on dry-cured meat products, as well as the information about the programs funded by the EU and the relevant ministries.

Just like in the past years, a committee comprised of renowned experts and scientists will evaluate the specific quality of prosciutto of individual producers participating at the Fair, the evaluation being based on the Ordinance on Prosciutto Quality Evaluation (Pravilnik o ocjenjivanju kvalitete pršuta).

Visitors will be able to become acquainted with the magnificent and precious heritage through the performances of cultural clubs from Dalmatia and beyond, but also through the presentation of traditional customs and unique handicrafts.

This is a unique exhibition based on the field research about preparation methods of traditional and indigenous dishes from Sisak area. It will explain and present old recipes to its visitors in a fun and educative way, taking them back to past times.

Organisers explained that, to enrich the restaurant offer, they brought these old recipes back into daylight. They are determined to prevent them, and their tastes and smells, from being forgotten.

And for people who decide to visit, we recommend not to miss the essential feature of this area - Nature park Lonjsko polje with its restaurant offer, where traditional dishes are prepared using the original old recipes.

Further on, we bring you recommendations for places that offer authentic cuisine in Nature park Lonjsko polje. Did you know there is a theme pathway in this area designed to be a reminder of the old way of life? It stretches through north part of Lonjsko polje and its life giving surroundings, vineyard hills of Moslavina and river Sava.
Its purpose is to emphasize differences between past and present, because most pathways that once led over the fields do not exist any more, bridges over rivers have decayed over time, main river channels are regulated, but river branches and seducing places near Lonja are kept. In the end we bring you some practical recipes and traditional method of drying fish:

Recipe: Carp fish on 'rašlje'

Ingredients:

1-1,5 kg carp fish

Salt

Red paprika

 

Preparation:

Clean and wash the fish. Cut the carp on the back so you get a big leaf, add salt and leave for a while to absorb. Rub the inner side with red paprika. From willow tree wood make 'rašlje' and stick the carp laterally on top of it. Stick the bottom of rašlje into the ground near the pile of cinders and turn from time to time so the fish gets done from both sides.

Last but not the least – read something about tradition of fish smoking on the attics of Lonjsko polje:

Smoked fish – forgotten delicacy of Lonjsko polje (by Vladimir Pajtlar)

In past times, residents of Lonjsko polje have dried fish on their attics. These were times when the fish was abundant, so not all the catch could be consumed immediately. And refrigeration was not yet available.

Best fishes for drying and smoking are carp, pike and bream fish, between 1,5 and 2 kilograms. Fish should be cut along the back, salt should be added and the fish put in brine for 5 days. After that fish should hang in the attic in cold and airy space. It should drain there for a day. Next day fish should be smoked for maximum of 2 hours. Dry willow tree branches should be used to make the smoke. Fish should be smoked every other day until it has been smoked for a total of five times. After that it should stay on the attic for at least ten days. The color of fish should become dark red. Before preparation skin must be removed. Dried fish can be eaten raw or fried on some fat. Bon appetit!

Winery and excursion resort Vinia includes a winery where you can taste wines from domestic production, two restaurants where you can organize all kinds of celebrations - education halls for different seminars and birthday celebrations for the youngest ones. Inside the excursion site there is a playground for children equipped according to the latest standards.

NEW CAMP IN OFFER

Within the excursion site, there is a new mini-camp inside this countryside household, called "Camp Vinia".

The camp consists of 4 parcels for campers and caravans, each 75 m2, and of a tent section for those who love to spend their holidays in tents, where 15 to 20 tents can be placed.
